Your HAPPi STUDIO Tamagoyaki Pan is ready to cook from the moment you open the box — no seasoning required. Follow these three steps before the first cook to set the pan up correctly.
1. Remove all packaging
Remove the pan, lid, spatula, and chopsticks from the packaging. Check each item for any visible damage. A small variation in the nonstick surface colour is normal and not a defect.
2.Rinse with warm water
Rinse the pan interior with warm water and a soft cloth. Do not use soap or abrasive cleaners before first use. This removes any residual manufacturing dust and prepares the surface.
Heat setting
Low to medium heat only — always. The Daikin fluoropolymer coating is highly conductive. The pan reaches cooking temperature quickly and holds it evenly across the base, which means high heatis never necessary. For tamagoyaki specifically, medium-low is the ideal setting throughout the entire cook. High heat is the single most common cause of nonstick coating degradation. It does not improve the result — it worsensit. Egg cooks too fast at high heat to roll cleanly, and the coating begins tobreak down above 260°C at an accelerated rate.
Oil application
Apply a small amount of oil to the panbefore each cook evenly, or use a folded paper towel. Wipe it evenly across the entirecooking surface. This is the correct method for every use — not just the first.
Utensils
Use only silicone, wood, or plasticutensils. The included silicone spatula is sized specifically for the base ofthis pan — it is the right tool for guiding the tamagoyaki roll without scratching the coating. The included wooden chopsticks give more precise control over the first fold than any spatula can. A single use of a metal utensil will not destroy the coating. Repeated use over time creates micro-scratches that accumulate and accelerate degradation. Establish the correct utensil habit fromthe first cook.
Inductionand cooktop compatibility
This pan works on all cooktop types — gas, induction, electric, and ceramic. On induction, set the hob to a low-to-medium level. The pan responds quickly and the same heat rules apply regardless of cooktop type.
What you do in the 10 minutes after cooking is what determines how long the coating lasts. The process is simple — cool, clean, dry. Follow these steps after every cook.
1. Allow the pan to cool completely
Never run cold water over a hot pan. The sudden temperature change causes thermal shock — rapid contraction of the metal that stresses the bond between the coating and the pan base. Allow the pan to cool to room temperature on the hob or a trivet before washing. This takes approximately 10 minutes.
2. Wash with warm water and a soft cloth
Add a small amount of washing-up liquid to a soft cloth or sponge. Wash the interior and exterior gently. The nonstick surface releases egg and food residue easily — you should not need to scrub. Rinse thoroughly with warm water.
Never use abrasive pads, steel wool, or anything that scratches. If food has stuck, fill the pan with warm water and allow to soak for 5 minutes before washing — the residue will release without scrubbing.
3. Dry Immediately
Dry the pan thoroughly with a clean cloth before storing. Do not leave the pan to air dry on a drying rack — water sitting on the exterior base can cause oxidation on the aluminium body over time. Dry the interior, exterior, and handle completely.
Hanging storage
The best storage for this pan is hanging — on a wall-mounted rack or a hook inside a cupboard door. Hanging eliminates contact with other cookware entirely and is the most protective option for the nonstick coating.
Flat storage
If storing flat in a cupboard or drawer, ensure the pan is the top item in any stack. Never place another pan, lid, or utensil directly on the cooking surface.
Stacking with other cookware
If you must stack this pan with other cookware, place a soft cloth, pan protector, or folded tea towel between the cooking surfaces before stacking. The interior nonstick surface must never be in direct contact with metal cookware above or below it.
The lid
Store the tempered glass lid separately — do not rest it on the pan with the knob facing down, as the weight concentrates on the glass rim and can crack it over time. Store the lid flat or upright in a rack.
The nonstick coating is most vulnerable to scratching when the pan is cold and stored in contact with other metal surfaces. A pan used daily but stored correctly will outlast a pan used occasionally but stored carelessly. Never put the pan in a drawer loose withother metal utensils or cookware.
The Happi Studio Tamagoyaki Pan uses a Daikin fluoropolymer nonstick coating. Here is what that means, what it does, and how to get the most from it.
What Daikin fluoropolymer means
Daikin is one of the world's leading fluoropolymer manufacturers. Their coating technology is used across premium Japanese and European cookware. The coating applied to this pan is PTFE-based — the same family as Teflon — manufactured without PFOA (perfluorooctanoic acid).
PFOA was a processing chemical used in older nonstick manufacturing and was phased out globally by 2015 due to health concerns. All HAPPi STUDIO cookware uses post-2015 manufacturing standards. No PFOA. No heavy metals. Food-safe at all normal cooking temperatures.
PTFE — what it is and what it is not
PTFE (polytetrafluoroethylene) is the nonstick polymer in this coating. It is chemically inert at normal cooking temperatures — meaning it does not react with food or release harmful substances during everyday cooking at low to medium heat.
Above 260°C, PTFE begins to break down and releases fumes. On a domestic hob at medium-low heat, this temperature is never reached during normal tamagoyaki cooking. The safety rule is simple: do not exceed medium heat, and do not preheat an empty pan on high heat.
How long the coating lasts
With correct care — the right utensils, the right heat, no aerosol sprays, hand washing — a quality fluoropolymer coating will perform correctly for several years of regular use. The coating does not suddenly fail. It degrades gradually through accumulated micro-scratches, heat stress, and chemical exposure.
When to replace the pan
Replace the pan when the coating shows visible flaking, chipping, or peeling. Small surface scratches from correct use do not require replacement — they are cosmetic and do not affect food safety. Flaking and peeling are different — if pieces of coating are visibly coming away from the surface, the pan should be retired.
A pan that has lost its nonstick performance but shows no flaking or peeling has likely been damaged by aerosol spray residue or overheating. Clean the surface thoroughly with warm water and a soft cloth, wipe with a small amount of oil, and test again before replacing.
