Dashi Tamagoyaki (The Savoury Version)
Ingredients
3eggs
3tablespoonsdashi stock, warm
1teaspoonslight soy sauce
0.3teaspoonssalt
1teaspoonsvegetable oil
Steps
Beat the eggs with dashi:Combine 3eggs, 3tablespoonsdashi stock, warm, 1teaspoonslight soy sauce, and 0.3teaspoonssalt in a bowl. Beat gently until smooth — do not over-beat. The dashi makes the mixture slightly looser than the classic version. This is correct — it produces a more delicate, silkier result.
Heat and oil the pan: Heat your pan over medium-low heat. Add 1 teaspoons vegetable oil evenly. The dashi version requires slightly lower heat than the classic — the added liquid means the egg takes a few extra seconds to set per layer.
First layer: Pour approximately one third of the mixture and tilt to coat. Wait until the surface is just barely set — slightly longer than the classic version. The edges will begin to look dry before the centre does. Begin rolling when the centre is still just barely liquid.
Roll gently: Roll away from you toward the far end of the pan. The softer egg requires a lighter touch — use the chopsticks to support the roll rather than push it. Push to the far end.
Second and third layers: Add the second layer, lifting the roll so the egg runs underneath. Repeat the gentle roll back toward you. Add the third layer and complete the final roll.
Rest and slice: Rest for 1 minute before slicing — the dashi version is softer and benefits from a slightly longer rest. Slice into 2 cm portions and serve immediately.
